		<description>I made napoleons daily when I worked at a bakery in Victoria.  I  made two strips usually, and I had to trim the edges.  The trimmings were my 10:00 snack.  Oh, so so so divine!</description>

		<description>Lisa- Excellent questions. Eclairs are made with Choux Pastry and not puff pasrty and they are filled with cream(basically a glazed cream puff without the whipped cream). Normally I would have flatten the sheets of dough to make the crispy layers(I did tell how to do it though). I just was to lazy to do that yesterday since all I had was scraps left over from making the tart :)</description>
