		<description>I was asked to make this for a friends Birthday back in June - I couldn&#039;t decide between the Manchego or the Blue, so I made both... And, folks were falling over themselves and me to get at it!! I was even asked to host a Manchego Cheesecake workshop! 

I changed the crust a bit, made it with a crust of herbed crackers, and added herbs to it.  

It was stunning - and now it&#039;s a favorite for all of us - !

Alas, now I&#039;m trying to decide which to make with my spiral ham &amp; Veg Barley soup for the holiday party...?
