HHDD #10 the round up

It’s here! Cheesecake day…and you certainly have your pick…54 to pick from to be exact. I just want to thank all of you who entered…you exceeded my expectations! 
Voting is now open and you do not have to be a HHDD particpant to vote. So please check them all out and vote by next Saturday, March 31st. Our first entry comes from the place that my husband and I are dying to visit…Sydney, Australia. Lydia over at My Kitchen offers up two versions of  mini cheesecakes(you know how I love the mini)…one lime and one with blueberries. Yum.

Our second entry hails from the nation capital(of the United States that is). Inspired by leftover Girl Scout cookies(who has leftovers? :) ). Kendle from My Husband Cooks offers up this scrumptious looking coconut cheesecake…complete with Girl Scout cookie crust.

Our third entry comes all the way from Hong Kong. Heather, a Canadian living in Hong Kong bakes for us a luscious Lemon Meringue Cheesecake. To see it head over to her blog at The Culinary Chase.

Entry #4 hails from one of my fellow Daring Bakers, crazy Canadian Brilynn from Jumbo Empanadas. She had originally thought of a pina colada cheesecake but went in a different direction…though still keeping the rum(a girl after my own heart). Bri brings you her Chocolate Cherry & Rum Cheesecake…with the main problem being that she didn’t get to eat any of it…oh the horror!

Entry #5 was sent to us from Rachel(of R KHooks), who is currently residing in Paris(oh, how I wish that were me). She brings us a beautiful Rose and Ricotta Cheesecake. She uses a rose jam, which I have never heard of but definitely interested in.

Our first savory entry comes from Chelsea of Bon Vivant. This Colorado resident made a scrumptious Goat Cheese Green Chile Cheesecake, which no doubt would make for a wonderful appetizer!

Entry #7 comes from another International blogger(so excited that we have so many), all the way from New Zealand.  Arfi from Homemades makes the Indonesian version of the Donna Hay Classic Baked Cheesecake.

This cheesecake was actually made back in February but I got pleads to allow it since Kitarra from Cooking Debauchery says it is THE cheesecake. So how could I not allow THE cheesecake to be entered!!!

Another one from our group of Daring Bakers(our baking group) was kind enough to enter these lovely Mini Rasberry Swirl Cheesecakes(again, you know how I love the mini). Morven of Food Art and Random Thoughts was super good and did not eat ANY of the cheesecake…she is a far better woman than me.

Barb of WinosandFoodies,the originator of Hay Hay It’s Donna Day sent us this entry(actually her son made it for her since she is recovering). Oreos were what gave this Donna Hay recipe the twist of the Classic Baked Cheesecake with Oreo Crust. Both her son and I agree that next time he will use double the Oreos.

Special Request

My puppy has a special request. Due to the recent pet food recall I have been thinking a lot about what we feed her. Luckily, her pet food is the snobby kind from the Vet’s office and so it was not one of the recalled ones(plus it is dry food). But her dog biscuits are from Iams, which is one of the recalled brands. I want to start making her homemade biscuits instead. So if you have a recipe could you please either post it here or send it to me(luvbriere (at) gmail (dot) com). She really loves peanut butter or chicken. Also, please spread the word about the North America recall. Many people do not have internet and may not even know.

Late Night Concoction

I am a horrific night owl, I mean it is currently 4:19am PST and I have yet to go to bed. One of the downfalls of playing the late game…keeps you wired up way past your bed time. Anyway, it does give me a chance to catch up on all my shows. We have DVR(which is like TIVO and if you don’t know what that is you must be my parents). I’m not sure what I did before DVR. When my husband suggested it, I rolled my eyes and thought, oh good another gadget, but really I can’t live without it. I tape pretty much anything, because, do you know what is on at 3am? Yep, nothing. So I taped a bunch of the Chefographys on Food Network. I liked the ones they had before and I have to say that it converted my into liking Giada, though I still don’t think she eats her food and if she does she throws it up afterwards. This week I watched Emeril(still don’t like him any better, maybe even a little less). I watched Rachel(she is fairly likable yet horribly annoying too…though I appreciate her bringing people back into the kitchen). I watched Bobby Flay(pretty much what I expected…he is cocky but has good drive). And today I watched Nigella. Wow. Now I own her Domestic Goddess cookbook, a gift from a friend and will admit that I never really even cracked it open. Even with a nudge from my blogging friend the Cream Puff I still didn’t bake anything from it. Until I watched that show. Can I just say I have a bit of a crush. Here is the gorgeous woman(who obviously eats her food without throwing it back up), who was extremely bright, very articulate and just filled and consumed with a passion for life that I only wish I had 1/5 of. Her attitude about everything was refreshing, especially with all the grief she has had in her life. So of course I ran to the cookbook at 2am and though what can I make that wont keep me up all night…little did I know I would still be up. I found muffins…muffins are always quick. I found a recipe for Baklava Muffins…oh, those sounded good, and more importantly I had all the ingredients. So I made those muffins, ate one hot out of the oven drizzled with honey and boy was it good. Not pretty by any means, but good.* Just a quick note: these are best eaten warm…so if they go cold pop them in the microwave.
I will most definitely go back and make more from this cookbook, however life has been mowing me over lately and I am also being buried alive in cheesecake(not a bad thing I know), so baking has taken a backseat.

Baklava Muffins

for the filling:

1/2 cup chopped walnuts
1/3 cup sugar
1 1/2 tsp cinnamon
3 TBSP melted butter

for the muffins:

1 cup plus 7 TBSP all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/4 cup sugar
1 large egg
3 TBSP unsalted butter, melted
1 cup plus 2 TBSP buttermilk

for the topping:
1/2 cup honey

Preheat to 400F.
Mix all the filling ingredients together in a small bowl, and then get on with the muffins. In a large bowl, mix together the flour, baking powder, baking soda, and sugar. In a wide-mouthed measuring cup, whisk the egg, melted butter, and buttermilk. Make a well in the dry ingredients, pour in the liquid, and mix lightly and gently, remembering to keep it bumpy rather then going all-out for smooth: anything more than the gentlest handling makes for a heavy muffin. Fill the muffin cups 1/3 full, add scant TBSP of filling, then cover with more muffin mixture until 2/3 full. Sprinkle any remaining filling on top of the muffin(I used all of mine for the filling).
Bake for 15 minutes. Put the muffins, still in their paper cups(I don’t use cups usually), onto a rack and drizzle with honey.
Makes 12.

Cookie Conversion

Of all the homemade cookies out there, I would have to say that the Snickerdoodle is my favorite. Now my mom’s snickerdoodles were just a little different than everyone else’s, for she adds nutmeg to the batter. A secret she would most likely get angry at me telling, but since she is hardly on the computer, I may have escaped a lecture. Anyway, I saw a while back and event called Muffin Monday, which I missed but put muffins on my mind. I created these awhile back but haven’t made them for years. What is so great about them is that they are rolled in cinnamon sugar just like the cookie so the top gets nice an crunchy while the muffin is nice and moist. In fact looking down at it, you would think you were just looking at a Snickerdoodle cookie(see below).

Snickerdoodle Muffins

2 sticks unsalted butter
1 cup sugar
2 tsp vanilla
2 eggs
¾ tsp baking soda
¾ tsp baking powder
¾ tsp cream of tarter
¾ tsp freshly grated nutmeg
1 and ¼ cup sour cream
2 and ¼ cups all purpose flour

1 cup sugar and 2 TBSP cinnamon mixed together for rolling

1.Cream the butter and sugar until soft about 3 to 5 minutes. Add in the vanilla. Add in the eggs one at a time and mix until each is incorporated.
2.In a separate, mix together the flour, baking soda, and baking powder and cream of tarter.
3.Add the flour mixture and the sour cream alternately to the egg-butter mixture in the additions. Start with the flour and end with the flour. Scrape the bowl occasionally.
4. Using an ice cream scoop, scoop out  muffin batter one at a time and drop into a shallow bowl filled with the cinnamon sugar mixture. Roll the muffin around in the mixture until it is covered completely in cinnamon sugar.. Place muffin in to muffin tin.. Depending on the size of your tins, you should get about 12 to 14 muffins. Bake them for approx. 20-22 minutes in a 350F oven or until they are golden brown.
