Great recipe! I made both muffins and mini-loafs and they were an instant hit. The kids loved them (of course, no telling them there was veg inside!) and my co-workers adored it. I like the addition of mascarpone, it really zings it up.

I’ve been absent from my blog of late, but I’ve been checking out my faves. I made this recipe earlier this week, as muffins–mercy! Sooooooooo good, moist, chocolaty, delish. Thanks for another great recipe that has quickly become a family favorite.
