Oh, the weather outside is…


Weather seems to be the only universal thing people can talk about and if you live in the Seattle area it’s pretty much the only thing people talk about. Most of this spring my FB feed has been filled with “where’s my spring?” It’s right here; it’s just not how you would like it. :) When the sun comes out FB is filled with “finally spring is here, it’s about time”. Again, spring has been here.

It’s the go to conversation for the grocery checker, who I always confuse. “Enjoy this gloomy day” I was told last week sarcastically after a slew of sunny days. To which I replied “I will, I love days like this, it’s why I moved to the Seattle area”. Then I usually get looked at like a freak. Which I am. Don’t get me wrong, as long as there is no heat along with the sun, I say bring it. But it rarely does that. Gray days are made for cuddling with the one you love under a blanket. Sipping tea and reading books. I play an indoor sport so I could care less about what it’s doing outside. I will ride my bike or go for a walk in the rain (down pours are the exception). Though I must admit that I do love a sunny day on the days I want to work out at the gym…not a person in sight.

This weekend is Memorial Day. I fear that my FB feed will be filled with people complaining about how the weather is ruining their 3 day weekend. Let us remember why we even get that day off in the first place, the brave men and women who gave their lives for this country. And while service men and women do enjoy a good BBQ you can remember the fallen whether it is raining or the sun it out.

Since most people reading this don’t live in my area, you might actually be getting sun. It might actually be hot. My Phoenix friends will be seeing high 90’s and even 100’s. Nothing cools down hot like ice cream. This is a very rich ice cream, as the main ingredient, other than heavy cream is peanut butter. But it does make for a very creamy and tasty frozen treat. You could throw in just chocolate chips if you can’t find the mini peanut butter cups. And what I like about this recipe is no eggs. So you can pretty much not mess this up.

People do ask me all the time what ice cream maker I have. I have a Cuisinart. They make a newer model of the one I have but I am showing you the one I have now, because I have had it for 8 years and it has worked beautifully. There are many more expensive ones out on the market, but I find this one does the job just fine! If you don’t have an ice cream maker, I suggest getting one before summer comes. I plan on making a ton of ice cream and you don’t want to miss out. :D

Would just like to end with saying thanks to the men and women (including my father and brother K) who current serve or who have served in the US armed services. Thank you for all you do.

Peanut Butter-Peanut Butter Cup Ice Cream

1 cup heavy whipping cream
2/3 cups whole milk
1 cup creamy peanut butter (I used Jif)
1/2 cup granulated sugar
½ tsp. vanilla extract
1 ½ cups mini peanut butter cups

In a medium saucepan simmer milk, cream, peanut butter, and sugar over medium heat, stirring, until smooth, about 1 minute.

Stir in vanilla and cool mixture to room temperature. Then place in fridge to chill for at least 2 hours.

Freeze mixture in an ice-cream maker according to manufacturer’s instructions.

Spread one half of the ice cream in a 2-quart container and top with ½ the peanut butter cups. Layer remaining ice cream and peanut butter cups and using a spatula swirl the candy and ice cream together.

Freeze ice cream in an airtight container for at least 3 hours in order for it to firm up.

  1. Rainy, cloudy and stormy weather is my absolute favorite. The only trouble is, in Kansas that type of weather means tornadoes, which we’ve been having a lot lately. That makes me a bit neurotic and freaked. :( I’ll trade you Kansas for Seattle, ok?

  3. Mmm I love eating ice cream when it’s cold outside. I don’t know why, but I think I eat more ice cream in the winter than I do the summer, but then again, I just like ice cream. I really do wish I had an ice cream maker; that would be spectacular :D

    Anyhows it’s been rainy here too. In the last two days we have gotten so much rain that it equals the average amount we usually get for the entire Spring season.

    I love rainy weather!! I’m in TX and it hasn’t rained for a good two weeks, maybe more. All sun and hot and humid. *sigh* Spring was completely skipped down here. It went from winter to summer.

  6. Have you ever made your own ice cream cones? I was eating a drumstick the other day and thinking how awesome it would be to have a homemade waffle cone filled with homemade ice cream.

  9. I live in the PNW and I do outdoor sports. It’s just the tradeoff you make for the lush green and being able to grow a garden no matter how skilled you are with plants. When it’s raining and I want to run I put on gloves and suck it the crap up, it’s only freezing cold and miserable for the first mile, after that the rain is heavenly. I cannot for the life of me think of a time that I wouldn’t eat this ice cream. Sitting naked in a snowstorm I’d eat this ice cream.

  10. I am a total bitcher (I don’t think that’s a word)about the weather here. Even my 3-year-old is starting to complain! I do love me some green, but couldn’t it rain from midnight to 5 a.m.? Oh well, you can’t have everything and I am bummed I can’t come over and eat some of this ice cream! An ice cream maker might be on the shopping list…

  14. I have a love affair with peanut butter + chocolate. YUM. I got a delicious Dove bar the other day that was milk chocolate + pb. I bet that’d work in here too!

  15. YUM!! My favorite.. usually I can only find chocolate ice cream with pb in it. But finally pb is the star in the ice cream. I can’t wait to make this.

    *if you try this recipe, I will warn you that after churning for an hour in my ice cream maker is was still really runny and not very “set” and I thought I did something wrong. But after a day in the freezer it set up just fine. Very creamy and is full of Nutella flavor :)

  16. You said it woman! We should all just be grateful for what we have and just let go of everything else…especially things like the weather that we can’t control anyway. And we should all eat peanut butter ice cream. but that’s a given.

  21. In most parts of Canada you don’t get Remembrance Day off unless you work for the government or a bank (which I do). Every year people complain that they should get the day off too. I say that the only people that should have Remembrance Day (or Veterans Day off) are actual veterans. Otherwise I’ve always believed that we should go to work thankful and in honour of those that laid down their lives so we can live the lives we lead and have the choices we have. Thanks for reminding everyone that this is truly what we should be celebrating on these “holidays” :) . Oh, and you had me at peanut butter :) .

    I like gloomy weather too! I live in sunny southern California and before the summer is half-way through I grow to hate the sun. Always feels like its bearing down on me. Although, I could have used a bit more sun for my road trip through Oregon over this past 1 1/2 weeks. I really wasn’t set up well for camping in the rain and it was just to wet for exploring the back country. But now I know where I want to go when summer comes around. :)

  28. yummmmmmmm. i love peanut butter ice cream. ben&jerrys pb cup ice cream is one of my favorite ice cream flavors ever made, and i think this recipe seems pretty dang close, but probably even better, since it’ll be homemade, and FRESH. cant wait to make it!!
