A little too fruitful…


Not sure why I thought that my roommate and I could eat Costco bananas, a ½ flat of raspberries, and 12 large peaches, but I did. It seemed so reasonable at the time, until of course I get it home. I know, I should freeze the raspberries, and I will, but there is very little space in the freezer so I have to do my best. I out and out ate a whole pint of raspberries yesterday. :)

I have zero time to write but wanted something up. These are a take on cream cheese swirl blondies…though I don’t know why you bother to swirl as they are both the same color and you get very little contrast, but oh well. They taste good all the same.

Do you fall victim to buying way more produce than you can possible eat before it spoils?

Peaches and Cream Blondies

11 tablespoons (1 stick plus 3 tablespoons) unsalted butter, room temperature, plus more for pan (divided)
1 2/3 cups plus 2 tablespoons all-purpose flour
1 teaspoon baking powder
3/4 teaspoon salt
1 cup packed light-brown sugar
3 large eggs, divided
1 1/2 teaspoons pure vanilla extract, divided
6 ounces cream cheese, room temperature
1 large peach, peeled, diced small, very ripe
1/4 cup sugar

Preheat oven to 325 degrees. Line a greased 8-inch square baking pan with parchment, allowing a 2-inch overhang. Grease parchment; set pan aside.

Whisk together 1 2/3 cups flour, the baking powder, and salt in a medium bowl, and set aside.

Put 9 tablespoons butter and the brown sugar in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until pale and fluffy, about 3 minutes. Add 2 eggs and 1 teaspoon vanilla; mix until combined. Reduce speed to low. Add flour mixture, mix, scraping down sides of bowl, until well combined. Transfer to a large bowl.

Put cream cheese, granulated sugar, remaining 2 tablespoons butter, 2 tablespoons flour, 1 egg, and 1/2 teaspoon vanilla into the clean bowl of an electric mixer fitted with the paddle attachment; beat on medium speed until just smooth. Fold in peach pieces.

Pour half the blondie batter into prepared pan, and spread evenly with an offset spatula. Spoon two-thirds of cream-cheese mixture on top, and spread evenly. Drop dollops of remaining batter on top (spacing about 1 inch apart), and spread. Top with dollops of remaining cream-cheese mixture, about 1 inch apart. Gently swirl cream cheese mixture into batter with a butter knife, running the knife lengthwise and crosswise through layers.

Bake until golden brown and a cake tester inserted into center comes out with a few crumbs but is not wet, about 45 minutes. Let cool completely on a wire rack before lifting the bars out of the pan and cutting into squares.

  3. Always. Especially at the farmer’s market. It doesn’t seem like very much until its time to plan meals around it. My frig and pantry are packed with enough wonderful produce right now to last me the next two weeks…and I did freeze some of it.

  4. Whenever my dad comes to visit, he takes me to Sam’s club. And I convince him to take home half the produce I buy from there before I know I won’t be able to use it all fast enough. The one produce item I can never use before it goes bad is lettuce. Apparently I don’t eat enough salad…

  5. Oh yum. I’m totally a fan of peaches when they’re ripe and yummy. I buy that bulk stuff too and then it ends up wasting away. Have you ever tried grilling peaches? That’s next on my list.

  6. Occasionally I do, but I know that it is pretty much me eating it, so I don’t buy too much.

    My coworker and I were talking and she was going to make a peach pizza: a shortcake/biscuit base topped with peaches. I thought it sounded so good!

  9. I keep buying a bunch of produce two days before our CSA box arrives! So then we have to really work on eating it and then we’re out before the next box, rinse, repeat.

  11. When I was a kid my mom always made us blondies. I love this peaches and cream idea. I may purposely fall victim to purchasing way more produce than I need. Thanks for the recipe!

  12. Peaches are so expensive here.
    One peach is equivalent to the cost of my lunch.
    But I still buy them anyway, but only 2 at a time.

  15. I usually make jam (with an apple and agave instead of added pectin and sugar) when stuff gets a bit too ripe. It’s a nice problem to have!

  16. Yes, I too have fallen victim to fresh peaches. They smell so good and in my delerium also purchased a whole flat.

  17. Any time I have the house to myself for a week or so I always overshop. It’s so much harder to shop for just one person, especially with produce. Anyone have a good solution to that problem?

    And these blondies look great! I loooove peach and we have some around the house. Looks like this will be a new summer treat!

    I have been trying to solve the problem of buying allways too much but can´t find any solution. I try to hold myself back once I enter the store or make a list and stick to it but there is always something so tasty and at a good price…

  23. You so sound like me. I bought a flat of strawberries, two points of raspberries, a pint of blackberries a few apples and a peach. For two of us. Really.
