Way Back Wednesday…the Refund Muffin

I think of all the things that my blog has been known for over the years, I think nothing more controversially than what eventually became known in the blogging community as the Refund Muffin. Which started out as a Snickerdoodle Muffin, which I loved. And so did many other people…but not one person. Who wrote this oh so wonderful letter: “Dear Mr. Peabody (first off Peabody is my first name and I am a woman…just want to clear that up), I recently made your muffins that were so highly recommended. One blog even said they were the best muffins ever. Well mine turned out horrible. I am an excellent baker so I know that I did nothing wrong, it must be your recipe. I wanted to bring these to a potluck and so I made a double batch. I wasted $7.30 on making these. Enclosed is my address, I would appreciate a refund for the money I spent on the ingredients. All cracked up….

“Did you make bacon?” This was said not really as a question but more of an accusation by my bff. As in did you make bacon and I didn’t get any how dare you. How. Dare. You. But no bacon was in sight (and not because it was in my belly). I stood there rolling out crackers as he kind of sniffed around like a basset hound (apparently a hound with a cold since his smell was off). He finally did break down and ask what I was making, and I said crackers. I got the no that’s not what I smell look from him but I followed up smoked cheese crackers…and the little light bulb went off. Trader Joe’s makes a blend of shredded smoked cheese that has a blend of smoked cheddar, Gouda, provolone, and mozzarella. It’s good stuff. Had seen on my time suck aka Pinterest people had made their own Gold Fish crackers and decided to give it a go with the cheese I had. Start your day (or night)off right…

Some things are most definitely harder to make from scratch than from a box. But one thing that is not and more people should do at home is pancakes! In about the same time it takes to mix up your Bisquick you can make them from scratch…and sorry Bisquick, but they come out much, much better. These are light and fluffy and go so fast that I couldn’t actually get a real photo of them. :) If you are feeding more than two people like I was this weekend, you might want to double the batch...they will freeze if you have extra. If you have never made them from scratch I challenge you to do so. How about breakfast for dinner sometime this week? Or save it for next weekend. Either way, go make some, come back and let me know. Rolling with it….

After my wedding was over and my vendors sent out their thank you notes for hiring them and a congrats for getting married kind of thing, I noticed a pattern in those notes. It was thanks for being one of the easiest going brides I have ever had the pleasure of working with. I was/am low key, I gave people ideas and in my opinion they did better than what I would have come up with so I would tell them great. And they would panic and say are you sure and I would be like yep looks great. In fact for my florist who as a friend just starting out gave total control to. I told her how much I had to spend and the colors of the wedding. Since I agreed to allow her to do whatever she gave them to me at cost. The only thing I wanted was pink peonies for my bouquet which was the most costly thing due to being out of season.
