You go away for a few days and…

As many of you figured out I was gone on a little mini vacation for a couple of days. I was asked by Harry and David if I wanted to fly out and see what they do there and decided that sounded like a great idea. I won’t go into the details in this post but I will tell you it was an amazing company with really good, genuine people working there who know how to show food bloggers a good time!

What I was a little surprised about was coming home to read a comment (and a couple emails) about if my blog was going to be just me posting random pictures they never would have voted for me for the home farm contest as that was to run my blog. I’m still running my blog. Posting photos is still running the blog. I was just trying to show you what I was doing. I haven’t been on vacation other than to Arkansas last year (and no offense to Arkansas but it’s not vacation destination in my opinion) in 7 years. So sorry to those few who were put out by me getting to go away for a few days. I’m back now can be at your baking beckon call now.

I got no chance to photograph these marshmallow treats except with one camera shot, but I figured what the heck I would give you the recipe anyway. They are a spin on Key Lime Pie. Made with Golden Grahams Cereal and a little Key Lime Juice. Mmmm.

Hope everyone had a nice couple of days while I was gone.

Key Lime Pie Cereal Bars
6 TBSP unsalted butter
16 ounces mini marshmallows
1 20 ounce box Golden Grahams
2 cups Rice Krispie Treats
3 TBSP key lime juice

Butter a 9-x-13-inch baking pan. Or be lazy like me and spray it with non-stick baking spray. Set aside.

Over low heat melt butter in a large pot (I like to use my stock pot because I am a messy person).

Once butter has melted, add marshmallows and continue to cook over low heat while they melt.

It may take a little time. Don’t turn up the heat to try and make it go quicker, you could end up with burned marshmallows or your treats could end up too hard once they firm up.

When most of the marshmallows have melted and they resemble marshmallow crème with a few lumps, remove from heat and add the cereals and key lime juice.

Using a wooden spoon, stir, stir, stir some more, until all the cereal is fully coated and other parts of the pot are not hogging all the marshmallows (so evenly coated).

Pour into prepared baking pan. Take a rubber spatula and either spray it with non-stick spray or simply get some water on it (I just put mine under the faucet real quick). Using the spatula, press the cereal/marshmallow mixture down into the pan, attempting to create a flat, even surface.

Cover with foil and let sit for a few hours to firm up.

Take foil off. Place wax paper down that is a little bit longer than the baking pan. Flip the pan over onto the wax paper. Cut into squares. Some would say 2-inch. But whatever size you would like works. You can also use cookie cutters to make them fun shaped.

  7. I typically say that a person is fine, people are jerks. But the internet has the uncanny ability to turn a person into people. Personally, I enjoyed seeing some pictures from your vacation and actually made me want to get away myself :).

  8. No one is saying that you cant go on vacation, so stop your wining that you havent been on vacation in over 7 years and when you finally do people are so mean about it. The point of MY comments the other day was that for a few days you kept posting 3 pitures and a few words. I was making a point that I hopt that kind of posting wanst going to keep happening. You also could have easily written that you would be on vacay for a few days when you posted the pics of the airplane, etc. Now for some witty comeback that you shouldnt have to tell your blog readers that your going on vacation blah blah blah.

  11. Why is it anyone’s business what you decide to post or not post. No one is paying for a service. They are being entertained by something you put up there for free. If you decided you wanted to just post 3 pictures every few days and no words, that’s your choice. You owe it to no one to inform your readers that you will be out of town. In this world of internet stalking and no privacy, I think it’s wise to NOT tell people you are doing things sometimes. Maybe Sarah above could take that opportunity to go outside and do something else rather than stew about not getting to read posts that were up to her standards for 3 days.

No need to get nasty! So lame. :( Sorry you had to deal with that when you were just trying to relax on vacation.

Other than the monumental task of voting for a few days your contribution is nil. So why is it that you feel justified in complaining when you don’t get a “proper” update? Even if a decision was made to make this a pure photo blog, how does that warrant any malice from you? Besides, it seemed pretty obvious that Peabody was on vacation from her images.

  19. You are one of the only blogs I read that have so many problems with your readers. You also seem to have a lot of problems with people in your personal life. What’s the common denominator? YOU! Stop acting so tough all he time, saying you dont care what others think, yet you’re gonna whine when one person complains about your blog. Oh and lying and saying that you recieved emails as well when clearly everything you said in the blog post above is exactly what Sarah said the ther day. What emails? If you’re gonna act tough then you should have just left this issue alone after your reply comment to Sarah in the other post. Instead of writing a whole new post about it.

  23. Here’s what I don’t get. If you really dislike Peabody and the way she posts or doesn’t post, why do you read her blog? There are zillions of other blogs out there. The internet is pretty big. Find something you like.

    I also think if you have an issue with two days of posts being all pictures, you have waaaay too many issues to be addressed on this blog!

    I agree with other commenters here: post what ever the hell you want to and forget the nay-sayers! It is your blood, sweat and tears (not to mention time and money) that go into this thing and I understand that it is frustrating to read negative comments from “readers”. What I tell my kids all the time when they are feeling undeserved harassment or negativity is to just IGNORE them. People who don’t have anything constructive to say are just doing it to get a rise out of someone and they know they can get away with it in the days of internet anonymity and fake email addresses. So the only way NOT to fuel their fire is to completely and utterly ignore them. Don’t even give them the courtesy of a reply. Now, sometimes, your stories about these rude people are just so funny that you have to share them. But if you disregard the nasties, they will leave (hopefully) and feel unloved (probably already do which is why they’re nasty) and you will have won! If you feel like you just can’t resist, you can try what I like to do sometimes: write them an email/letter that puts forth your point of view but then delete it and don’t bother sending it (this goes to the point above about not playing their game). It’s very cathartic! Keep on keepin’ on P–you are great at what you do and if people have a problem with it that is their fault, not yours!

  29. Seems to me that some people have too much time on their hands. I’ll vote extra next time to make up for the happy loss of “sarah”. I loved the pictures from your trip; it’s exciting when people you know (or who’s blogs you read) get opportunities.

    Truthfully, I did not vote for you every day, but I voted every now and then. And also truthfully, when I saw that you had a few blogs with pictures I did not care for and held no interest for me, know what I did? I scrolled quickly and *closed* the page without another thought. Because, well I didn’t exactly understand what you were posting, and not understanding meant not caring (they didn’t look like hostage photo clues so yea).
