The month of thanks…

I will start the month of thanks off by saying that I am super thankful for easy desserts. See I have a ganglion cyst in my right hand. 99% of the time it’s just there and doesn’t bother me. But every now and then it decides to move and sit on a nerve. That makes my whole hand up to my elbow go completely numb. Sometimes it last only hours sometimes for up to a week. I’m a few days in sadly. Very little baking and cooking…and no photography. Oh well.

Luckily there are easy desserts, so easy I can make them left handed. :D This is an adaptation on a cake I LOVE. Dump Cake. You have to love a cake that you just dump stuff in. Though this version does require more work than the original. It’s soo yummy though. Think pumpkin pie meets cake. Don’t turn your nose up just because it uses cake mix. I have tried to recreate dump cake without using cake mix and is simply doesn’t work.

Here’s to hoping my hand gets working soon so that I can get baking and get writing!!!!

Pumpkin Dump Cake

1 15 oz. can Pumpkin Puree
1 10 oz. can Evaporated Milk
1 cup light brown sugar
3 eggs
3 tsp. pumpkin pie spice
1 box yellow cake mix
1 cup (2 sticks) butter melted
1 cup chopped pecans

Preheat oven to 350F.

Spray a 9×13 baking pan lightly with cooking/baking spray.

In a large bowl combine the pumpkin, evaporated milk, sugar, eggs and pumpkin pie spice. Stir to combine.

Pour into your prepared pan.

Sprinkle your entire box of cake mix on top, followed by your nuts.

Pour your melted butter evenly on top.

Bake for 45-50 minutes until center is set and edges are lightly browned.

Serve with ice cream or whipped cream.

  1. Oh yes, this must be mine!(But not until I have enough friends to make sure that I don’t eat the whole fricking thing.)

  2. I just had wrist surgery for that. :-/ blech. but, so far, so good. pumpkin cake looks yummy.

  3. Looks fab as always! I love dumpcake! Hoping your cyst moves back so you can get back in the kitchen. xo

  4. Mmmmm…I made this a few weeks ago for an event; even people who said they hate pumpkin said they loved it! So good!

  5. Oooh, looks so yummy and perfect for fall! :)

  6. OMG were you talking about me again? Yes, I’m sure of it. You were talking about me, right?

Seriously though, go get that ganglian cyst suctioned. I’ve got the lowest pain threshold in the universe and had mine sucked out by a hand surgeon (while I was awake watching and no anesthesia) and he just stuck a needle in and sucked out clear jelly-like stuff and I’ve never been bothered again by any cysts, ganglian or otherwise. Walk in the park. Go on, get it done and report back to me. I’ll wait.

  7. I love pumpkin anything! This looks sooooooo tasty!

  8. Sounds good to me!! Hope it heals really fast Peabody!

  9. Carole R. says:

YUM. Tomorrow’s project. Have everything on hand,

  10. Can’t you smash those cysts?

  11. YUM. I love anything pumpkin. And easy just makes it all the better!

  12. @lolo- can’t smash them when they are on a nerve. Has to be surgically removed. My insurance considers it cosmetic surgery and therefore doesn’t cover it unless my hand is numb for wait for it…3 documented months.

  13. This sounds like a very interesting cake, and easy is always good. I’m sorry to hear about your hand, though. I hope the problem gets fixed soon :)

  14. Hi there- I love your recipes. Have you ever considered making them printer friendly?

  15. Elizabeth says:

Yum, I have got to make this!! Thanks!

  16. I love pumpkin anything! Sounds delish.

  17. Peabody, love your blog & have been reading for a while. :) Sorry your hand is being unfriendly. This recipe looks awesome, but we’re kinda out of evaporated milk. Is the usual milk/sugar combo sufficient to substitute, or will I have a baking fail if I try that? Thanks again for all your brilliant humor – I definitely get a kick out of it. :)

  18. @Amanda- I think you would be okay, sadly there is only one way to find out.

  19. Lazy desserts are the best! Love this.

  20. I have plenty of pumpkin puree from roasting pumpkins over the weekend. And, I’ve never made a dump cake before. I am going to try this. Immediately. Thanks for sharing.

  21. I don’t know if you get an alert to comments on old posts but I wanted to say that I made this for Thanksgiving and it was fabulous. Super easy to put together after the big meal and very tasty.
