Dear On-Line Retail Stores,
You can suck it. Oh sure you offer up your too good to pass deals to lure me in. And so I add you to my cart, get all excited thinking I am done shopping and go on my merry little way. Only to get an email from you six days later saying opps we don’t appear to have that in stock.

You don’t appear to have that in stock? What ever happen to that thing called inventory? I thought we were of the modern age where you could track stuff like that better. And especially On-Line. They say there are three available, I buy one of those and then there are two left. I know we aren’t the leading county in math, but come on people, it can’t be that hard can it?

And let’s not forget the part where they already charged you for it so you have to wait for them to put the money back into your account (if debt) or on your credit card. How is it that they can take your money in a millisecond, but to return money it will take 8-14 business days? Clearly there is something fishy with that system.

Gets you so mad some days you want to throw back a few. Since it’s the holidays and all there is always Egg Nog to take the edge off. Though ironically I like egg nog desserts and even a latte, but I don’t like actual egg nog…is anyone else like this? The BFF had a pot luck and of course signed up for desserts so I wanted to do cheesecake, but something a little more portable…enter the cheesecake bar. There was no bourbon in them for the work ones, but the ones that stayed home were garnished with a little bourbon whipped cream for good measure. ;-)

Egg Nog Cheesecake Bars

1/3 cup sugar
½ cup unsalted butter, at room temperature
1½ cups all-purpose flour
½ tsp. ground nutmeg
½ cup granulated sugar
½ cup Egg Nog
2 (8-ounce) packages cream cheese, at room temperature
3 eggs
2 TBSP all-purpose flour
1/8 tsp. ground nutmeg

Heat oven to 350°F.

Combine 1/3 cup sugar and butter in large bowl.

Beat at medium speed until creamy. Reduce speed to low; add 1 1/2 cups flour and 1/2 teaspoon nutmeg. Beat until well mixed. (Mixture will be very crumbly.)

Press crust mixture onto bottom of ungreased 13×9-inch baking pan. Bake for 15 to 17 minutes.

Meanwhile, combine all filling ingredients except nutmeg in same bowl. Beat at medium speed, scraping bowl often, until mixture is creamy.

Spread filling over hot, partially baked crust; sprinkle with 1/8 teaspoon nutmeg. Continue baking for 28 to 33 minutes or until set. Cool completely. Cut into bars with wet knife. Store refrigerated.

  3. This is the only way to have eggnog (other than in your amazingly delicious looking cheesecake, of course)

    The ladies at my office – who dislike drinking eggnog – absolutely loved it as an ice cream. :) Just a thought!

  5. Ohh the headaches of online shopping this season! I am currently living in Japan & 99.9 percent of our shopping for Christmas has to be online and several companies screwed up and took our money quick and then took over a month to return it..ugh. We are still waiting on 1 package and its a week before Christmas. My husband actually does not like Eggnog at all but I will have to try this!

  6. Well, I’ll take eggnog in any form. (Although I actually like milk punch better as a drink.) In bar form, it’s inspired.

  7. As a programmer I can sympathize a bit with the retailer (or at least the code monkeys who built the system). When an item has low stock I can see the situation where 3 or 4 people are checking within minutes of each other, and because the items are in your cart, but not sold yet, the system allows more items to be purchased than available. Very few options to fix it, since you wouldn’t want to allow a person to “hold” an item in their cart, lest they never release it. The amount of time it takes for them to get back to you is probably process based and the result of human influence. They probably get a flag right away saying that something is wrong, and then must go through the steps to confirm and send an email — it really should be automatic. Though absolutely NO retailer should charge your credit card before they ship your item. That’s simply ridiculous.

    And I LOVE eggnog. Ever since I was a kid. I think it’s probably the worst drink in the world for you as far as calories/fat/etc… which makes it better.. and if your a traditionalist or just enjoy alcohol (not me) then there’s booze in it too :). But I know plenty of people that like eggnog in baked goods but not to drink. I think it has a lot to do with the consistency of the drink as a opposed to the flavour. And your cheesecake bars look fantastic. Amusingly I know people who don’t like both cream cheese and eggnog. The idea of this awesome dessert would likely kill them :)

  8. oh my goodness, I totally agree with the shopping, I went through this whole big ordeal with barnes and noble about shipping and canceling certain things, and we finally got it all worked out and a week later I got an email that they were out of my item. Soooo frustrating!

    On another note, I also do not like egg nog, but I have never tried it in dessert, looks good!

  9. So glad that did not happen to me! When I ordered my dad’s present it said two available (though I suspect there were really more). Phew! Love cheesecake bars. mmmm!

  10. Ugh I had something like that happen with one of my orders where they said something went wrong with my payment going through even though the funds were taken out of my account. Of course they had to cancel my order as a result then had to wait for the refund and to top it off the thing I had ordered is now no longer in stock :-(. But they did give me a 25% off coupon for next time.

    i only stared at the photos while listening to my stomach growl.
    Last year I wanted to make an eggnog cheesecake–obviously it never happened.
    so now i will do it because you made one LOLOL!
