Coming up…


So I’m a little in denial about how quickly the holidays are coming upon us. Less than two weeks and Thanksgiving will be happening and then the blur begins. I’m still trying to figure out where the tree is going to go in the house. And then there is the whole looming idea of dragging all the holiday stuff out. Don’t get me wrong I love it but the unpacking and packing up of it all is no fun.

The other thing I have to start thinking about is holiday baking. While most people do it in December, us food bloggers have to pretty much be doing it now…so that you all have ideas for when you want to bake. Heck when I used to do magazine work I would have to have my holiday stuff done in August!

I braved Wal-Mart the other day…and yes brave is the correct word. I know some people love that store…I am not one of those people (like the prices the people scare the crap out of me). I went in search of the Gingerbread Oreo and Peppermint Marshmallows. Which I found both at. Which I bought a ton of because I figured I would like them and did not want to go back to Wal-Mart in the near future.

This bar cookie is a play on one of my more popular Pinterest recipes, White Chocolate Topped Gingerbread Cookies. I had originally planned on making them with white chocolate chips…only to go to the cupboard and realize I didn’t have any. So milk chocolate it was. You can try it either way. If you can’t find the Gingerbread Oreos just use the golden ones. But if you can order them through Amazon.com Gingerbread Flavor Creme Oreos ~ Limited Edition!!.

These are plenty yummy and would be a great treat to bring to a holiday party or cookie exchange if your exchange allows for bar cookies. Speaking of cookie exchanges I have a new Pinterest board if you would like to follow that is dedicated to cookie exchange ideas.

  5. I think this sounds a good gift to give my colleagues at work. I have no chance in getting the Oreo gingerbread cookies but think I can improvise with another English ginger sandwich biscuit and it should work. Thanks, Pea, your hard work is much appreciated! x

    These look absolutely delicious! I’ve been craving some kind of bar treat for a while now.

    Oreo keeps coming up with so many new flavors. I kind of want to taste the gingerbread kind… Do they taste like gingerbread men?

  10. I am so freaking excited about the holidays being here! I love all the fun festive products to bake with and all the goodies that are constantly floating about my belly. Oh and of course spending time with family :-P . I have those Oreos too, need to figure out what to make with them!

  11. In India the festive season just about ended, but that doesn’t stop us from celebrating Christmas and everything else, it’s just not on as large a scale. So our ‘holiday baking’ is done and over with, except yes, I’ll soon start baking for Christmas – the traditions that don’t really belong to us.

    Those bars look absolutely amazing, I wish we had all those types of Oreos her!

    Dear Peabody: Thank you for your quick response! I made another batch with less flour and the dough was much easier to work with and after the taste test, the less flour batch got the thumbs up! Thank you for this great recipe!! The taste is amazing and I plan on taking these to our annual potluck with friends!! P.S. I did venture to Walmart and a Gingerbread Oreo display was right as you walked in!! Thanks again……:)

  15. I just put these bars in the oven – even the batter smells amazing! I took the advice of another comment and cut back on the flour. I used 4 cups and my dough had a good consistency. When I was ready to put the top cookie layer over my Vanilla WhoU? Cookies ( I did not have enough patience to brave WM), I placed my dough between 2 sheets of wax paper and rolled it to the size of my pan. The dough stuck a little to the paper, but I was able to place a nice layer of dough on top of the WhoNu? cookies. I had to make some adjustments along the sides and corners, but it was much easier than paving the dough by hand.

    I can’t wait for these to come out of the oven!
