Just Roll with it Baby…

I originally wasn’t going to post today. There was a large group of bloggers who were going to show support to Sandy Hook Elementary and the town of Newtown Connecticut and not post today. Well they were going to post that they weren’t going to post…which is a post in itself if you think about it. I thought long and hard about whether to post or not. I’m quite sure you all could have gone a day without this Shortbread Roll-Out Sugar Cookie recipe but that isn’t the point. While there are simply no words to express about the tragedy that occurred on 12/14 (perhaps that’s why it’s best to just not blog) I feel for me personally that I must appreciate that fact that I am still here. My family is still here. And it thankfully did not happen in my community. And therefore to go on with my daily life including running a blog. That doesn’t mean I don’t think about it. Stuff it….

Yes those are mashed potatoes. Yes in shrimp. Yep they are rolled in potato chips. Yes these are also the most requested appetizer that I make. An unusual combo for sure but then again consider the source of who’s making it. :P Yes this is another recipe brought over from my other blog. The recipe was originally written for the folks at Tillamook as an ode to their cheddar cheese (which I do so enjoy). It might work well with pepper jack cheese as well but I like the flavor profile that the sharp cheddar provides. Despite the fact that this does take quite a few steps you can do most of it ahead of time (you can stuff the shrimp they night before). So that when party time starts you just have the deep frying to do. Which if you have a little deep fryer you could totally bust these out quickly. Define good….

Dear Santa, As usual this year the word “good” may be defined in a different way. :D I was always “good” at helping the economy buy always spending at least $100 at Costco or Target anytime I went. I am “good” at supporting the dairy farmers by using lots and lots of butter…as well as “good” at helping out the dentist of the world. :P I was “good” at constantly pointing out someone’s bullshit. This person lies sooo much that their feces could cover a Central American country. I was “good” at breaking parts of my body. I was “good” at swearing at my old printer that was always acting up. I was “good” at swearing at myself for playing poorly at hockey as well as swearing at the people I was playing against. I’m really, really, really “good” at pinning stuff on Pinterest. Butter and sugar (my two favorites)…

Nothing perks up my day more than someone emailing and asking me if I would like free butter. And not just any butter…Plugra. If you have ever baked with it you are filling up with jealousy and trying to find my house to rob me of my case (yes case) of Plugra. If you have never had it you are saying big deal. The big deal is that it is European style meaning slow churned and therefore less moisture in the product. You get a creamier texture that produces a rich and wonderful flavor. Your cakes tend to rise higher and your pastry crusts (as my friend L found out when making pie crust with it) turn out flaky and as she put it the best pie crust she has ever tasted. So yeah getting a case of it was a big deal. Now before you think oh my gosh how would you ever go through a case…I would. Easily…It’s 6 pounds of butter. I am already through half of it.
