Split Personality….

National Banana Split Day is August 25th 2013. You have a week to get ready. I’m telling you now so that you have no excuse. It’s pure coincidence that Banana Split Day and my Banana Split Banana Bread happened around the same time. But hey, I’ll take it.

For a girl who hates talking about cars….I sure do love Top Gear.

I’m having a small Pinterest problem with pinning Fall outfits. Like a really big problem.

Our hockey season ended this last week. We have no hockey for a few weeks and that could end badly for anyone who pisses me off. :) The good thing is that MDP and I have Thursday nights off for a bit (we work pretty much every Thursday of our lives to pay for our hockey)…I won’t even know what to do with myself (that’s a lie…laundry, I’ll be stuck doing laundry).

Not sure what I ate the other day but I had a dream in which I was in a random casino bar in Laughlin NV (haven’t been in 20 years) and Beyoncé was hitting on MDP. And so naturally I beat the crap out of her. While my goalie and another girl on the team were shouting and cheering me on. Then while she lay knocked out on the dance floor I danced the Single Ladies dance around her as if to mock her. Doesn’t everyone have that dream? :)

So I get cookbooks to review…a lot. One of them I got last week is a Paleo book. Which whatever we don’t eat like that but I can adapt the recipes. But it had a recipe for beef jerky. Which now MDP is obsessed with us making our own jerky. So if anyone reading this works for a company who sells food dehydrators and wants me to review it let me know. :) I personally need another single performing appliance like I need a hole in my head but MDP seems very excited about jerky. Boys.

Speaking of cookbooks, Fall is when they tend to come out in droves are you looking forward to any? I am wanting Pok Pok: Food and Stories from the Streets, Homes, and Roadside Restaurants of Thailand and Tartine Book No. 3.

I originally was going to make a Banana Split Layer Cake and then I reminded myself that I don’t really like making layer cakes. So I thought what can I make that will have the flavors but is a heck of a lot easier than a layer cake….ah yes, banana bread. This does have all the flavors amazingly enough and was a ton of fun to make…and eat. You can adapt it to how you like your banana split…mine always used to be vanilla ice cream topped with pineapple, strawberries, and chocolate sauce so that is what I went with.

Banana Split Banana Bread

  • Banana Bread Batter:
  • 1 1/2 cup smashed bananas (about 4 medium bananas)
  • 1 cup granulated sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • ¾ tsp. baking soda
  • ¼ tsp. salt
  • For the Banana Split Layer:
  • 8 oz. cream cheese, at room temperature
  • 3 TBSP strawberry jam
  • 1 egg
  • ¼ cup granulated sugar
  • 1 TBSP all-purpose flour
  • ¼ dried pineapple, diced
  • ¼ cup maraschino cherries

  1. Spray a regular size loaf pan with baking spray. Set aside.
  2. Preheat oven to 350F.
  3. In a medium bowl whisk together the flour, baking soda, and salt; set aside.
  4. In a large bowl add the bananas and sugar and mix together using a whisk. Add the oil and mix until incorporated.
  5. Add eggs and beat until incorporated.
  6. Add flour mixture to the banana mixture and mix on low until the ingredients just start to come together.
  7. Using a stand mixer with a paddle attachment beat together the sugar and cream cheese until fully incorporated.
  8. Add jam and beat for 30 seconds.
  9. Add egg and flour and beat until egg is fully incorporated.
  10. Fold in the pineapple and cherries.
  11. Pour half the banana batter into the loaf pan.
  12. Then pour the cream cheese mixture on top of the banana layer.
  13. Then pour the remaining banana batter.
  14. Swirl with a knife.
  15. Bake for 45-55 minutes depending on oven.
  16. Let cool top with chocolate sauce and whipped cream.

  1. You are so creative! I’m definitely going to have to make this soon…

  2. That bread looks so good! A great creation.

  3. My hubby is obsessed with beef jerky (as are the kids). We have, surprisingly, been able to make great jerky (and we are fussy) with our Nesco brand one ( my only purchase in 10 years from Wal****). Good luck!

  4. I’ve been alone all day at home and I just laughed out loud reading your dream. I kind of scared myself a little lol! I’d beat her for you too if she messed with your man :p

  5. What a great idea! That bread looks so good!

  6. I have a confession: I don’t like bananas unless they’re (a.) plain or (b.) baked into a baked good. No PB&Banana sandwiches for me, and definitely no banana splits (shudder). I’m kind of addicted to the laffy taffy though. :)

My favorite idea of a “banana split” is a piece of banana bread topped with a scoop of vanilla, a scoop of peanut butter ice cream, and a scoop of butterscotch ice cream, drizzled with butterscotch and topped with peanuts and whipped cream. Maybe now I finally have an excuse to make it!

  7. Your banana bread pictures are gorgeous! Never thought to make banana split banana bread. So creative. Love the way the cherries look in the bread.

  8. You can make jerky on a rack in your oven. What you really want is a really good carving knife or one of those fancy jerky cutting sets. I love moist and tender beef jerky (kippered). It’s cut a little thicker and dried a little less and often smoked. You have to keep it in the fridge and it will not last as long but it’s so delicious. Also, if you haven’t tried it – bacon jerky is ridiculously delicious and probably a heart attack waiting to happen.

  9. This is an incredible idea….love it!

  10. Bring on the fall outfit pins! I am so ready for fall attire, although I am not ready for pumpkin recipes. I want for summer recipes!

  11. Food dehydrators are great for making fruit leathers! And my favorite way to do deer jerky is with maple syrup…

  12. You do pin a lot but what I really appreciate is that when I’m up late & looking at Pinterest, there is new stuff being pinned in my feed because you are pinning when no one else is, it not being so late for you since you are on the other side of the country from me.

  13. @kate-hehe….yes I am a late night Pinner. :)

  14. check out how alton brown dehydrates without a dehydrate i beleive it is a fan and heater filters

  15. Thanks for the idea @nancy

  16. Okay, this is brilliant! I am so loving this recipe for banana bread, gotta try it soon :)
