Get your Vegan on…

Back in 2007 I reviewed a Vegan baking book called My Sweet Vegan for my blogging friend Hannah Kaminsky. If you don’t know Hannah, she runs the blog Bittersweet. One of the things I love about Hannah is that even though she is Vegan herself she is more than okay with others not being Vegan. While I very much liked her first book, I must say that Hannah has really grown in her dessert making in the years between. There are quite a few vegan books out on the market these days but very few dessert ones. As many of you know I have a slight dairy allergy so I *try* to not have dairy all that often, usually turning to coconut milk based ice creams, as I can also not have soy as well. The first recipe I noticed right away was for Mojito cookies which I made, but you won’t be seeing them until an upcoming Farm Update post as I used the mint from my own farm for the cookies. Red, White, and…nope, that’s it….

Well I definitely got a variety of questions that is for sure but we will start with this one: “When blogging, have you ever put something there that you later regret? You seem so forward which makes you awesome to read but do the people in your life feel the same?” No. I have no regrets. I am who I am. And if you really go through and read my blog no one is mentioned by name other than me. Even my pets, which sadly answers the question to the person who asked as to what is my dogs real name. Sorry, I don’t do any real names on here…pets included. People either get a nickname or just “someone I know”. I tell stories sometimes about my parents but nothing too bad. And though I have two brothers they are hardly mentioned on here, and my nieces and nephews are off limits. They didn’t put themselves off limits I did. That just happened…

So I made salted caramel ice cream. I put it on top of a vanilla bean cake which is a recipe I will share this weekend. Then I got distracted (shiny squirrel) only to come back later and notice that I left my ice cream out and it melted. I don’t like the texture of melted ice cream refrozen so I knew I wouldn’t be freezing it again. Well crap I thought. And then I thought again. I thought what if I just let it come to room temperature and then make it into frosting? So that’s what I did. If you are going to give this a go you can use any ice cream I suspect, but I would steer clear of any overly sweet ice creams to start with as you will be adding more sugar to make frosting. While I have been loving my new ice cream book, I thought I would go back to my first ice cream book that I had much success with, The Perfect Scoop. Five servings of fruits and veggies…

I have what I feel is an unnatural addiction to corn (not to be confused with porn…spelling is very important here kids). For years growing up it was one of the few *vegetables* I would eat (along with the other fake vegetables of peas and potatoes)…oh and green beans, I loved those as well. I really should have been born somewhere in the Midwest as I would gladly eat corn with every meal. I put it in my scrambled eggs with a little basil…mmmm. I eat giant bowls of it with just butter and sea salt as a meal. Of course on the cob. Creamed. You named it. So naturally, years ago when passing a corn stand and seeing “try our corn ice cream” I decided why the heck not. And holy goodness. So when I got ahold of Jenni’s Splendid Ice Cream book and the first things I saw in the summer section was a recipe for Sweet Corn Ice Cream with Black Raspberry sauce I KNEW that was the first thing I was making no questions asked!!!
