Way Back Wednesday….my favorite Key Lime Pie…

This is my favorite version of Key Lime Pie. It’s called camping pie because of the original post. The mascarpone really does add extra creaminess to an already creamy pie! Did I mention VOTE!!!! Peabody's Camping Key Lime Pie with Coconut-Pecan Graham Cracker Crust 1/2 cup key lime juice, fresh if possible 1/4 cup heavy whipping cream 1/3 cup Mascarpone cheese, room temperature 1 can (14 ounces) sweetened condensed milk 1 to 2 teaspoons finely grated lime or key lime zest, divided 5 egg yolks whipped cream, for garnish 1 coconut-pecan graham cracker pie shell(recipe follows) Whisk sweetened condensed milk with the egg yolks. Unsolicited Advice…

Peabody’s current top ten advice to all the people who didn’t ask for it in the first place. :P 1. If you talk crap behind someone’s back, don’t be shocked or upset if someone does it to you. At some point in your life, even though it’s never right, you said something not so great about someone, maybe even your friend. So just know that if you are willing to talk about someone behind their back, they are willing to do the same. It’s human nature. 2. Treat others how you want to be treated. I’m a firm believer that Karma is a only a bitch if you are. If you go through life being an a-hole or a bitch don’t be shocked when people treat you horrible. You can’t call someone a pathetic excuse for a human being and expect them to come back and tell you what a great person you are. 3. Buy clothing that fits. Dear Victoria Secret, First off, thank you so much for caring and taking the time to write me every day (sometimes twice a day) it really does mean a lot to me that you care so much about me and my undergarment choices. That being said, you clearly have not seen a photo of me as of late. Because if you did you would know that the pink dental floss you are calling underwear would look insanely horrid on me. For I am on 120mg of Prednisone a day which is not kind to the body. And even before that I was not what one might call model shape. :) Let me let you in on a little secret of my own Victoria…I eat food. I know your models have learned to live on Sugar Free Red Bull, cigarettes, coke, and air, but that bandwagon is not for me. And therefore sending me photos day in and day out of barely clothed women isn’t going to inspire me to run and buy your clothing. Humble pi….

When I taught math, there was no day that I loved more than that of Pi Day. March 14th (or 3 14…get it?). Let’s face it, math can sometimes be a bit dry and from a teaching stand point it can be very hard to motivate students to want to learn higher math. When asked why we had to learn this “stuff” I usually replied, because “I had to and it seems only fair to make your life miserable as well”. Which they all know I was teasing, kind of. The real reason you learn math of course is money. Most of the jobs that pay the best involve you getting a degree that uses higher math. That tends to motivate students a little more. :) I mean, even drug dealers (at least the good ones) should know the metric system. :P But Pi Day was the one teaching day a year I was sure the kids would have fun….yet educational at the same time.
