Way Back Wednesday…the Refund Muffin

I think of all the things that my blog has been known for over the years, I think nothing more controversially than what eventually became known in the blogging community as the Refund Muffin. Which started out as a Snickerdoodle Muffin, which I loved. And so did many other people…but not one person. Who wrote this oh so wonderful letter: “Dear Mr. Peabody (first off Peabody is my first name and I am a woman…just want to clear that up), I recently made your muffins that were so highly recommended. One blog even said they were the best muffins ever. Well mine turned out horrible. I am an excellent baker so I know that I did nothing wrong, it must be your recipe. I wanted to bring these to a potluck and so I made a double batch. I wasted $7.30 on making these. Enclosed is my address, I would appreciate a refund for the money I spent on the ingredients. I will take a personal check if that would be easier. Sincerely, XXXXX” At first I thought this person was … [Read more...]

Way Back Wednesday…back to school…

So I usually tell a different story when I do Way Back Wednesdays but this is one that always makes me happy and many of my teacher friends in Arizona are headed back into the trenches this week and so I thought I might remind them of some of the great things about teaching. This is originally from August 30th, 2008. This is a great recipe and perfect for an after school snack to go with your homework. Obviously there has to be a good side to teaching, for if there wasn't, no one would do it. There are many great moments in teaching. Many of those moments you will never know about, and that's the hard part. So often it is years later after you were that child's teacher that you realize the impact that you made on that child. And it usually never the kid you would have thought. Case in point. I had a student when I taught 6th grade. Her older brother was in 8th grade and struggling something horrible in science. At the time the science teacher was what one might call technical(you … [Read more...]

Way Back Wednesday: Chocolate Peppermint Stick Marshmallow Fantasy Cake…

This week’s installment of Way Back Wednesday is a bittersweet one. It comes from what I made for my housewarming party back in 2007 when I was so excited to be moving into my new home. It ties in sort of with a readers question so I thought it seemed like a good choice: Is being single after marriage scary? What advice would you give to someone who is going through a divorce for how to get through it? Getting through it? Well, I am still getting through it so to speak. When I was first was going through it I pretty much thought I was crazy. I would be happy and content thinking yes clearly this was the way to go, and literally an hour later bawling my eyes out freaking out. But with time that passes. I still randomly cry if I run across something but it helps that my ex and I still talk and see each other from time to time. There was no, I will never see this person again in my life. I think people feel like when they get divorced or they break up (especially if they are … [Read more...]

Way Back Wednesdays: Peanut Butter Cup Brownie Torte

I entered a contest on Facebook and when people saw the photo they wanted the recipe (if you are bored and want to help me out go here). It got me realizing that many of the great recipes that I have on here people don’t know about. The average blog reader only sticks around 2 years, so if I have been around 6, there are many a treat that you might have missed out on. So for the summer since I am a wimp and don’t want to turn on the oven as much, I will be featuring Way Back Wednesdays. And yes, if you are wondering that is a nod to Mr. Peabody and the WABAC machine. :D The first feature is the Peanut Butter Cup Brownie Torte that prompted this idea in the first place. I will warn you that if you make this the American Diabetes Association will put a red flag by your name for making this. :P But red flags be dammed. I will also warn you that this is pretty rich, but darn good. To cut down on the richness if you desire I would use less peanut butter mousse. I didn’t but I have … [Read more...]
