Darn close to the world’s best….

Ever notice no one ever says World’s Most Mediocre Banana Bread? They should though. I have tried my fair share of World’s Best Banana Bread only to be sadly disappointed. Perhaps it’s like in Elf when he believes the sign World’s Best Cup of Coffee. Deep down I know it’s probably not going to be the best banana bread and yet I try any way. I like my mom’s banana bread as it is unique because it uses graham flour, but I would not call it the world’s best banana bread (well at least not for me…it’s good don’t get me wrong). Part of the problem is that most banana breads in my opinion don’t use enough bananas. I mean one of the main reasons I am even making banana bread is because I have a ton of bananas to use up that are mocking me on the counter. So when I recipe calls for 1 or 2 bananas I say boo on that. So I decided to try and think what is it that I love? Malted milk. I use it in a lot of things…I’ve never used it in banana bread (or muffins in this … [Read more...]

What the future holds…

Butterfinger Cream Cheese Banana Muffin

First off if you haven’t claimed your prize please check yesterday’s post to see if you won! I still have 4 unclaimed prizes. Plus you should probably just read yesterday’s post anyway. :) Yesterday I sat at one of the many 8th grade promotion ceremonies I have attended in my lifetime. My own of course. The ones I had to attend as an 8th grade teacher. And the one last night. It was warm, packed with proud parents and bored siblings, dressed up like Hawaii on steroids (there was a Ride the Wave to High School Theme), and of course filled with 8th graders with eager and nervous smiles, who most could pass for adults with how they looked. Of course for most of them in four years they will be legal adults. They may not act like adults but neither do some 38 year olds I know. :P A lot will change for them in the years ahead. Heck, just as the slide show last night showed, a lot had changed in the three years at middle school. Going into high school I was dead set on being a … [Read more...]

Quiet Riot…

mimi'smuffin3

I was watching the news yesterday and they were interviewing a man who wanted to remain anonymous (yet you could see his full face and most of his body…duh). He was down at the May Day protest that were happening in Seattle (we really are just Vancouver wannabes) and they asked him why he was protesting. And he gave the best answer ever “I don’t really know, I just figured I should get down here and get me a flat screen TV before other looters get the good stuff”. Excellent. Congrats on showing your full face and admitting on TV that you are going to loot. That’s fantastic, your parents must be so proud (but then again, sadly they might). Also congrats on having no idea why you were “protesting” in the first place. I almost started a riot myself yesterday but I had good reason. See my friend was just in Chicago and she knows I have an unnatural love for Mimi’s Café’s Carrot Raisin Muffin and she brought me some home. Yes, clearly she is awesome. But while she … [Read more...]

Long week…

Clearly you deserve a better post…but that won’t be today. :P It’s been a long week around here. People who are close to me know that when someone passes in my life I usually bake bread. Not sure why I just always have. Sadly one of our local hockey family, a guy I have played both with and against, passed away on Wednesday morning. He played a game of hockey and said he wasn’t feeling well but still went to his second game of hockey where he played a few shifts. Told everyone he didn’t feel great and was going home. And at 7am the next morning he had a heart attack and died. Life is short people, spend it with the ones you want to, don’t waste your time on anything that isn’t bringing you joy. I did manage to make something…these are kind of healthy muffins…well healthy for me. I was going to make a pretzel topping but never got around to it. Like I said, weird week. Peanut Butter White Chocolate Chip Muffins ½ cup vegetable oil 1 cup peanut butter (your … [Read more...]
