Filling my time….

September is in full swing now and there is no looking back. While our weather is pushing for a little Indian Summer action it can’t fool me, I know that Fall is on its way. This is the time of year when my soul awakens and comes alive. Leaves will rustle under my feet. All my cute coats get pulled out of the closet. The chill in the air in the morning. The trips to the pumpkin patch. Hot chocolate. Hot cider. Hot tea. Warm blankets. Snuggly fiancé’s and pups. All good, all good. And of course all the Fall baking. I’ve worked out a little system of sorts in order to get to bake and while it takes three times as long right now I’m not doing a whole lot. There isn’t much on day time or night time TV for the matter. I’ve watched way too many movies. Including such winners as the North Shore (which ran at like 3am) and Road House (which I couldn’t make it through). PUMP(kin) it Up take two…

We all know that I love Pinterest. I still to this day thank/curse Kristen(Dine and Dish)for introducing it to me. While it might be a time suck it is a constant source of inspiration of all things not just baking/cooking. I almost (and I use that term loosely) want to clean and organize after I am on Pinterest…almost. :P I also love it of course because it brings people to my site and I always love gaining new readers! One thing I am always interested in on Pinterest is what things do I bake/make are popular on Pinterest and it usually surprises me…big time. One thing were these muffins. Now these are not like a Way Back Wednesday, these are like a redo Tuesday. :) So many people had been pinning them that I decided to remake them…as these bad boys were originally posted six years ago…yep...SIX! The month of thanks…

I will start the month of thanks off by saying that I am super thankful for easy desserts. See I have a ganglion cyst in my right hand. 99% of the time it’s just there and doesn’t bother me. But every now and then it decides to move and sit on a nerve. That makes my whole hand up to my elbow go completely numb. Sometimes it last only hours sometimes for up to a week. I’m a few days in sadly. Very little baking and cooking…and no photography. Oh well. Luckily there are easy desserts, so easy I can make them left handed. :D This is an adaptation on a cake I LOVE. Dump Cake. You have to love a cake that you just dump stuff in. Though this version does require more work than the original. It’s soo yummy though. Think pumpkin pie meets cake. Don’t turn your nose up just because it uses cake mix. I have tried to recreate dump cake without using cake mix and is simply doesn’t work. Pumpkin meet Oreo, Oreo meet pumpkin…

Been very uninspired in the creativity department as of late so I asked Facebook readers what they thought I should make. Someone asked for a Pumpkin Coffee Cake but with Oreos. Umm, okay. She was very excited to be selected. I’m sure it was a disappointment that there was not prize or anything. Hopefully this is what she was looking for. I was going to glaze it but really couldn’t figure out what to glaze it with. Plus I wanted it to be more like a portable snack cake, which it is. No time for a real post sorry. I hope to get a lot of baking down this weekend and will attempt to make it up to you.
