Like Taffy…

No, this cake has nothing to do with Taffy. But taffy is what I feel like. I feel like I am being pulled in 20 different directions lately. And what does that leave me, besides being tired? It leaves me doing a whole lot of stuff mediocre and all round half ass. And oh how I hate that.

I focus on one thing, all the others go on the back burner. So then I start to concentrate on something else, but then the first thing I was focusing on is now going to crap. And it seems to be a never ending cycle as of late. I’ve got cookbooks to review, magazine pictures to shoot, products to feature, a insanely dirty house to clean, a large pile of laundry that mocks me daily, baking for my blog, baking for my side project. And well, none of it is being done.

So with my life in perpetual mediocrity I decided to stick with something simple. Yes, I know, another loaf cake. What can I say, they are easy, and you don’t have to frost them. One thing people always bug me about is why don’t I make a full size loaf ( I usually use 6 x 3.2 x 3.4 inch loaf pans). Perhaps we can clear this up once and for all.

Peabody’s Reasons for Baking In Smaller Loaf Pans

1. When you make mini loaves, you can share the love. More loaves, means more people can get them. Not just you. Stop being greedy. :P

2. You hardly ever get the problem of a gooey middle when you bake in mini loaf pans. I like people to actually be successful when they bake my stuff, so go mini, you have better odds of it working out. Which means less emails/hate mail to me telling me something didn’t work out.

3. Portion control. Eating a whole mini loaf is way better than eating a whole regular size loaf. Therefore I don’t have to buy bigger jeans. So really, it’s helping my budget. ;)

4. They fit in my freezer so much easier.

5. Mini food is cute.

6. Makes your hands feel huge when looking down and holding a whole loaf of bread in your hands. Which in turn makes you feel powerful. Well, okay, maybe not powerful.

7. I’m holding out one day that they fine people of Chicago Metallic (along with the Jif people) will give me kick backs for always using their mini pans.

8. They photograph way better than a full size loaf.

So there you have it. My reasons for using mini loaf pans. And with that I will giveaway a set of 4, Chicago Metallic Professional Mini Loaf Pans, in hope of shutting up one person about my use of mini loaf pans. ;)

As for this cake, it is a simple yogurt cake (I used Greek) with both vanilla beans and vanilla extract and coated in orange glaze. This has both oil and yogurt so it is super moist. Simple. Moist. Good.

Vanilla Yogurt Cake with Orange Glaze

1 2/3 cups all purpose flour
½ tsp baking powder
¼ tsp baking soda
½ tsp salt
1 egg
1 egg yolk
1 cup granulated sugar
1 vanilla bean, seed scraped out, pod discarded
1 ½ TBSP vanilla extract
7 oz Greek Yogurt
½ cup vegetable oil
4 TBSP orange juice, divided

Spray two 6 x 3.2 x 3.4 inch loaf pans with baking spray. Or coat with butter and flour.

Preheat oven to 350F.

Using a stand mixer (or a large bowl and and electric hand mixer), beat together the egg, egg yolk, and sugar on medium-high speed, until it turns pale yellow, about 3 minutes. Add the vanilla beans, vanilla extract, and oil, beat another minute, until fully incorporated.

In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.

With the mixer on low speed, add half the amount of dry ingredients. Then add half the amount of Greek yogurt, and 2 TBSP of the orange juice. Add remaining dry ingredients and followed by the remaining yogurt. Remove from mixer and finish mixing by hand using a spatula until all of the ingredients are fully incorporated.

Pour into prepared pans and bake for 35-40 minutes.

Remove from oven. Using a toothpick or large wooden skewer poke holes into the cake. Using a pastry brush, brush orange juice over hot loaves.

Let cool for 10 minutes and remove from pan. Place on wire rack to finish cooling. When cool, glaze cakes.

Orange Glaze

2 cups sifted powdered sugar
6 TBSP orange juice

Combine the two ingredients together with a whisk. Pour over cakes.

    I always bake in mini-loaf pans, too. It’s definitely a portion control issue for me — if the cake is good, I’ll want to eat it all, so why not start with a smaller portion? And I like to freeze most of what I bake, so I’ll have things on hand when people drop by for afternoon tea (which they do, out here in the wilds of Rhode Island).

    This is a great idea… we always get through about half a loaf of bread/pound cake before I’m ready to try something new. Mini loaves would completely solve this problem so I could freeze or give away half.

    I will admit that I was a little bit disappointed when I read at the end of the post that this was a vanilla yogurt cake because I was hoping it was lemon. I love lemon cake. Then I saw it had an orange glaze and felt better.

    Simple can be good as seen in this recipe. Another wonderful recipe from Peabody and I just picked up some vanilla beans last weekend. I love the idea of mini loaves for all of the reasons you mentioned.
    Life can get chaotic at times and I guess you just have to prioritize, and you know where dirty laundry goes on that list :) . Remember don’t sweat the petty stuff and don’t pet the sweaty stuff.

    I totally agree with all your points re mini-food! I love my mini-madeleine pan because there are 24 instead of 12, which means that I get to make lots of cute little packages for my neighbors.     lol…I think you just wanted to see how many comments you would get. I would LOVE mini loaf pans! Agreed, they’d be a great portion control. Also, I get a craving almost every day to make a dessert, but then I make a full-scale something or other and after the first several pieces I’m not interested in the baked good anymore. If I would freeze half of it, then I could just pull them out of the freezer when I feel the baking urge come on again. BTW, I love the combination of an orange glaze with a vanilla cake.     As for the taffy story, man, I know whatcha mean! One thing that helps me (not really, but sometimes and theoretically always!) is to “not let the good get in the way of the best”.     Love, love, love the mini loaves. I bake a lot of your recipes for a senior care home near my house and the mini loaves work out perfectly for many reasons.

    One: older people like little things (maybe because smaller things make them forget their shrinking).

    Two: individual little cakes makes each of the ladies feel like they’re getting their own special present.

    Three: it makes it easy for the care givers to serve.

    And Four: I can leave the glaze off a couple of the loaves for the few ladies that don’t like things “too sweat”.

    i love mini loaf pans! i could definitely use a set. i always buy those decorative disposal ones when i bake for other people. i find that people are more willing to accept a mini loaf rather than a regular sized loaf. probably because they’re so darned cute! and they aren’t confronted with the possibility of eating/throwing away a whole loaf of something they’re not sure they’ll like. yay for mini loaf pans and all the goodies to be baked in them!

    mini loaf pans are fabulous when you’re making cupcakes and you have too much batter left over and don’t want to fill another few cups. then you can give it away, or eat it all yourself, and pretend that you meant it that way. not that i just did that, or anything.

    MMMM Greek Yogurt in here, YUM. The loaves don’t look so mini until you see that last picture with what looks like a GIGANTIC knife sticking out of it, hahaa. I always ALWAYS bake mini… usually in minicupcakes, or minibundt or minispringforms since i don’t have mini-loaves yet. But Mini is better, I agree!

    There is another good reason to bake in a mini pan…you don’t have to feel guilty if you don’t share. A mini pan loaf is just right for one :)

    I have to agree that mini loaf pans are fantastic. When I use standard sized ones, the center of my quick breads are always undercooked and the outside well done!

    I’ve never used mini-loaf pans before, and I confess I’ve never had problems with undercooking with the standard loaf pans, but I definitely see the utility of mini loaves since I’ve made quickbreads as gifts and ended up making double recipes in order to be able to gift to multiple people since each recipe only makes 1 or 2 normal loaves. Love your site and humor and creativity.

    Well I missed the contest, which is okay since I am not a US resident anyways, but wanted to say thanks for coming up for the words to describe how I feel lately – taffy! Perfect!
    I own a few mini loaf pans and I like them but tend to use my bigger pans because that way I have less dishes. And cause I only own a few mini pans and when I’m doubling a loaf recipe, that means not enough pans.
